Walnut, cherry and Gorgonzola salad

I recently had a version of this salad at a restaurant in my neighborhood.  My response was, naturally, to say “Pshhh, I can make that.” So here it is, minus one of the key ingredients: prosciutto.

Since my life is full of various pork-avoiders, I made this version without it.

  • Mixed greens
  • Dried cherries
  • Walnuts, toasted
  • Gorgonzola, crumbled
  • Prosciutto (optional)
  • Olive oil
  • Balsamic vinegar
  • Lemon juice
  • Salt and pepper


  • I mean… do we really need to go over this?
  • Toss lettuce with the balsamic, olive oil, and some lemon juice
  • Sprinkle on the prosciutto if using, the toasted walnuts, cherries, and cheese
  • Season with S&P
  • Eat up.
