Blackberry and wild rice salad


This is part two of the July dinner party menu:

I guess I need to work on my plating/photography, but I think you get the idea.  This is a pretty salad, even if I am just taking photos with my iPhone.

  • 8 oz. wild rice (it takes a little while to cook that stuff, so make sure to plan ahead)
  • 4 oz. blackberries
  • Few handfuls of arugula
  • 1 cup goat cheese
  • Fresh parsley
  • 1 lemon (for juice and zest)
  • Olive oil
  • Sea salt and fresh ground pepper


  1. Cook your wild rice according to the instructions, and then let it cool
  2. Once cooled, gently toss the berries, rice, arugula, and parsley together in a large bowl with olive oil and lemon juice
  3. Crumble goat cheese over the top, followed by lemon zest
  4. Season with salt and pepper
  5. That’s all!
